Bidwell Ranch
The Bidwell family raises cattle in the Kansas Flint Hills. We sell beef straight from the ranch, and we tell you what you are buying: the cuts, the weights, the price per pound, and which group of cattle it came from. We are not going to describe how our cattle are raised until we can put the specifics in front of you, because a vague claim is worth nothing and a precise one you can check is worth a great deal. That page is coming, and it will say exactly what we do. What we can tell you today is on every box: a lot number. It opens the record for the cattle in it — where they were, when they were harvested, who did the cutting, and how long the beef hung before it was packed.
The places

We raise the cattle. We do not process them.
Harvest, aging, cutting and packing happen at a USDA-inspected plant. We name them on every lot record, because crediting ourselves with somebody else's work would be the first small lie.
